Biltong originated from the Dutch word ‘BIL’ which means rump and ‘TONG’ which means strip. Biltong is the dried meat that is the pride and joy of South Africa. Almost everyone loves biltong. Biltong has been around for ages, this dried meat never goes out of style.
Types of biltong
There are generally two types of biltong which is beef biltong and game biltong. But as time passed people started trying new things and experimenting with other types of meat and we ended up with ostrich, pork, lamb and poultry biltong.
Biltong can be enjoyed eating plain as it is or spicing it up with some spice, from chilly to barbeque to sweet or peppery. The choices are all up to your taste buds.
So how does one make this delicious Biltong?
Well it’s rather easy yet some dwell in the primitive styles but with the help of some modern biltong maker we get the best results and thee most delicious biltong types.
All you need is:
Good quality meat/beef some rock salt
Very course black pepper
Course ground coriander
Apple cider vinegar.
It is rather important that before starting any process one should sterilize all hooks and working utensils first, and all work surfaces. Begin to cut meat into strips about 6 inches. Then sprinkle some of the course rock salt onto the meat. Make sure that all the pieces of meat has a liberal amount of salt and leave to stand for one hour. Make sure every part of meat is covered with the Apple cider vinegar and the make certain you hold biltong up so the excess vinegar begins to drip off. You can fan dry your biltong, you can just hang in a cool place that is clean, or you can purchase a biltong drying machine and dry out your biltong. There are various methods in drying out biltong. Remember when biltong is ready always softer in a cool dry place or in air tight containers.
